A deliciously eggy breakfast (that I regularly make for dinner) that resembles scrambled eggs... not exactly the same, but hey, you might like this version better! I have given you the base recipe and you can grow on it however you like – add mushrooms, tomatoes, coriander, thyme, parsley or chives and accompany with Smoky Salsa (p. 167), Sweet Chilli Hot Sauce (p. 162) or even Coriander Dip (p. 49).
