It wouldn’t be an alyce alexandra cookbook without a panna cotta recipe! It truly is one of my favourite desserts, and this time I have combined it with one of my other great pleasures: chai tea. The result is a smooth and silky dessert with delicate spiced flavours – the perfect way to end our Indian feast, offering tea and sweets in one.

Loose black chai tea
Raw sugar
Powdered gelatine
Thickened cream
Vanilla extract
Sweet biscuits (such as Shortbread,
Gingernuts or Anzac biscuits
