I love a slow-cooked curry – the flavour in this one is so rich and intense and the meat is so meltingly tender. And, unlike most dishes, the flavour actually improves with age! By slow cooking this beauty in the oven we’ve also freed up the thermo cooker, meaning you can get to work on steaming rice and vegetables, kneading roti dough, cooking chutneys, blending raitas, whipping up dessert or even getting tomorrow’s breakfast started. This recipe is a favourite of mine, not just when I’m entertaining, but also for my Sunday cook-ups where I like to make big batches that can be frozen so I’m well- stocked with tasty homemade meals for when I don’t have time to cook.
