Exactly the same idea as the magic berry coconut pie (page 39), except here I’ve subbed out the eggs and dairy (also making it vegan), meaning even more people can enjoy this deliciousness! You can also use a gluten-free plain flour, so I think I’ve got almost all of you covered. Honestly it holds itself so well with the coconut cream and flaxseed substitutes I questioned whether I’d put the original recipe in.
