Almost a pie, almost a clafoutis, almost a pudding... I’m not sure exactly what this recipe truly is, but I do know it is completely foolproof and the results are divine! It sets like a clafoutis on top, but then on the bottom creates it’s own pie base. It actually tastes better cold so it’s a great one to make in advance and pull out of the fridge when desired. I’ve used berries in mine, but you can use whatever fruit you like – perhaps figs in autumn and apples and pears in winter. For the ultimate vanilla flavour, I love milling down half a vanilla bean along with the sugar in my sweet recipes. You can do the same – any time a recipe requires sugar and vanilla bean paste or seeds simply mill the volume of sugar and part of a vanilla bean for 20 seconds, speed 9. Voilà!
