People regularly ask where my inspiration for recipes come from, and often it’s a badgering family member! My sister Loryn wanted a healthy lemon tart recipe, so this was Ellen’s creation. I was so impressed that I cut it from the draft of her vegan e-book and included it here. It is satisfying and delicious, yet actually nutritious! There might be a few ‘what the heck is that’ ingredients but I promise you, buy them from the health food store, stock them in your pantry and, aside from the lemons, you’ll have everything you need to make this tart time and time again.
