Whip up the batter in next to no time with my easy recipe, and then bake it in a sheet cake pan with our reusable sheet cake liner for a huge, rectangular cake that slices into even squares like a dream. Perfect for kids' parties, morning teas, lunch boxes... you name it. In fact, it might just be my favourite way to bake a cake!
A sheet cake is the easy-going, crowd-pleaser of the cake world – big, simple, and perfect for sharing! Baked flat in a large rectangular pan, it’s all about easy slicing and serving, making it the go-to choice for parties, BBQs, and backyard get-togethers. No fancy layers or towering decorations here; just a cosy blanket of frosting and a whole lot of flavour in every bite. It’s the cake that shows up ready to have a good time, no cutlery needed – just grab a square and dig in (also super easy to cut even portions )

Ingredients
300g buttermilk
300g strong, hot coffee (basically a mug of long black)
150g light-flavoured extra-virgin olive oil
3 free-range eggs
3 tsp vanilla extract
260g plain flour
75g cocoa powder
400g brown sugar
2 tsp instant coffee powder
2 tsp bicarbonate of soda
1.5 tsp baking powder
1 tsp fine salt
Method
- Preheat oven to 175°C fan forced.
- Place buttermilk, coffee, oil, eggs and vanilla in TC bowl, mix for 10 seconds, speed 4.
- Add flour, cocoa, sugar, espresso powder, bicarbonate of soda, baking powder and salt, mix for 20 seconds, speed 3. Combine any remaining loose flour in using a spatula (this is the best spatula!).
- Pour into lined sheet cake pan (the easiest way to line is to use our reusable sheet cake liner). Bake for 40 minutes, or until a skewer inserted comes out clean.
- Allow to cool in tin for 15 minutes, then lift out of tin and pull back liner. The easiest way to remove the liner completely is to use a large chopping board to 'flip' the cake over - see exactly how I do it in the below video.
Allow to cool completely before serving, or icing with my delicious Chocolate Cream Cheese Frosting (free recipe here!).
