Quick Pickled Veg in the Thermomix using our Thermo Cutter & Slicer

I have been such a fan of quick pickles for years, slicing up red onion, cucumber, radishes, beetroot, carrots... you name it, I've pickled it! But what has recently got me so excited about pickling all over again is the addition of my WunderSlicer Thermo Cutter & Slicer to my Thermomix machine - I can now prepare my vegetables perfectly in a matter of mere minutes! Ingredients

Cucumber, red onion, radish, beetroot, carrot and/or zucchini

1 tsp salt
1 tsp sugar
1/2 cup white vinegar
1/2 cup water 

Method

  1. Place your WunderSlicer Thermo Cutter & Slicer in position on top of your Thermomix machine. If you want a quick guide on how to do that, click here to watch the video. I would recommend the thick slice blade for your pickled veg. 
  2. Set your machine to reverse speed 2.5. 
  3. Place veg down the chute and use the feeding tube to guide the vegetables, not push the vegetables. Let the machine do the work - you'll get best results!
  4. Once your veggies are all sliced, pack tightly into a glass jar. 
  5. Add salt, sugar, vinegar and water. If this doesn't fill your jar, keep adding water and vinegar in a 50:50 ratio until your veggies are fully submerged. 

Wait minimum 30 minutes before enjoying, but better yet place in the fridge and use the next day. Will happily keep in the fridge for up to a week. Drain and to salads, sandwiches, cheese boards, rice bowls... anything savoury that could do with a fresh, tangy hit!
