This tzatziki doesn’t need your Thermomix machine or thermo cooker, but it’s going to accompany so many recipes in this cookbook that I just had to include it. I’m a huge fan of making your own dips as it means less waste, fewer nasties, saving money and a much better taste, but I’m especially a fan of this dip recipe as you can never find plant-based tzatziki! Serve with your Gyros That Always Impress (p. 83), Punchy Couscous Salad (p. 108), Pita Pockets (p. 144), Middle Eastern Cauliflower Salad (p. 111), Eggplant Tagine (p. 106) and of course on its own whenever you want a fresh dip.
