A recipe that all plant-based cooks need up their sleeve as most store-bought plant-based mayonnaises are, to put it bluntly, dreadful tasting and loaded with crap! I’ve given you the classic base recipe, but you can explore and create a million different flavours. Add garlic for an aioli, smoked paprika for a creamy Mexican dip, wasabi for a Japanese dressing or sriracha hot sauce as we do in our ‘Chicken’ Tacos (p. 93). Toss through salads for a Caesar dressing and use in ‘Tuna’ Sandwich Filling (p. 58)... one recipe, so many possibilitie.
