This dish instantly transports me back to my childhood; it was one of our favourite dishes and Mum would cook it regularly. Now as an adult I can see why she did – it’s easy to whip up, super tasty and you probably already have most of the ingredients on hand. My preferred base is white rice, which is perfect as I always seem to cook far too much to accompany a curry! The excess rice is never wasted – I just store it in the fridge or freezer, ready for a tuna mornay makeover.
