So many of my favourite recipes require egg yolks (think rich ice creams, custards and savoury sauces), and I am often at a loss as to what to do with the whites! While pavlova is an obvious (and delicious) choice, for everyday fare I can’t go past these biscuits. Caramelised on the outside and chewy in the middle, they are really simple to make. They also happen to be gluten free, dairy free and packed with wholesome ingredients, making them a real crowd pleaser when a sweet snack is in order. Now that I have my own chickens the wonder of the egg never ceases to amaze me, and there’s no need for any part of it to ever be wasted.
