There’s many a recipe for salsa verde out there, but most require lots of steps and harder to come by ingredients, so we’ve called this one the cheat’s version! Salsa verde, translating to ‘green sauce’, is a fresh and zesty cold sauce made predominantly of fresh herbs that’s usually served with Mexican dishes, although the options don’t stop there! Dip your tortilla chips in it, drizzle on tacos, nachos (page 105), refried beans, burritos, eggs, jacket potatoes (page 76) or pizza, use as a salad dressing or even as a base for a pasta sauce. It adds big flavour thanks to the fresh herbs, a hit of spice from the jalapeño and a fresh tang from the mustard and vinegar, lifting any dish.
