A fresh, bright, Middle Eastern green sauce. Similar to our salsa verde (page 197), it’s fresh and zesty thanks to the fresh herbs and lemon, but this time we’ve got cumin and cardamom to add even more flavour. Traditionally it packs a bit of heat, but I’ve gone a little easy with this recipe ... increase or decrease the spice to your taste. Drizzle over falafel, grilled vegetables, eggs, curries, roast potatoes, polenta chips (page 122), soups and stews, and even use as a dressing and toss through couscous, barley or fresh tomatoes.
