Combining these three ingredients will give you jam perfection. The raspberries offer a sweet flavour and brilliant ruby hue, the rhubarb adds a contrasting tartness and creates a great texture, and the vanilla subtly perfumes the jam, decorating it with tiny black seeds. Much, much more than a simple condiment for toast, try stirring it through yoghurt, cream or ice cream, sandwiching it between sponge cakes, or tossing it with sliced apples or peaches for an impressive pie filling or crumble base.
