These meatballs are a complete meal-in-a-mouthful! You’ve got juicy meat, creamy feta, sweet currants, crunchy pine nuts, fresh herbs and even a nutritional dose of kale for good measure. All that mopped up with sourdough bread and bound together with egg. Pack in a lunchbox with fresh veggies, serve at a picnic or cocktail party with toothpick skewers, or wrap in pita bread. You can of course serve them with a dipping sauce such as hummus (see page 37), tzatziki, rhubarb and ginger relish (see page 242) or tomato chutney (see page 240), but they’re so good they don’t really need one.

Minced beef (not lean), roughly broken
Eggs
Greek feta, roughly crumbled
Currants
Pine nuts, toasted
Flavour bomb salt or Fine salt
Macadamia oil, for frying
