This is possibly the quickest, easiest and cheapest way to feed a crowd. Don’t let the long list of ingredients fool you – you’ve probably got most of them at home already. I recommend keeping a supply of basmati rice, frozen veggies and stock concentrate at home, then you can always whip up a quick rice dish for dinner. Once you’ve got the basics, the flavourings and accompaniments can be substituted with whatever you’ve got on hand, and if you don’t have tortillas simply serve this as a burrito bowl.

Brown onion, peeled and halved
Garlic cloves, peeled
Olive oil
Basmati rice, rinsed just prior to cooking
Mixed frozen vegetables
Can diced tomatoes
Water
Stock concentrate
Canned black beans, rinsed and drained
Lime, juice only
Sweet paprika
Ground chipotle chilli
Salt
Grated mozzarella
Greek yoghurt or Sour cream
Coriander leaves
Lime wedges
