This is one of those classic fruit breads – laden with dried fruit, heavy with a dense and nutty flour and aromatic with a medley of spices. Only difference, we’ve subbed out the gluten for a high protein, high fibre combination of nuts, seeds, psyllium and chia – not only is this loaf bursting with flavour, it’s also bursting with nutritional value. This one’s another super wet mixture, but it will thicken up dramatically in the resting time - let the chia seeds and psyllium husks work their magic.
