I always try to create vegan dishes that everyone loves, not just the vegans! These sausage rolls hold their own with their bold curry flavours – definitely not a Clayton’s version. You’ll need to get started on this recipe a couple of hours ahead of time as the filling needs to be refrigerated, but this can work in your favour as it allows for some serious meal prep – you can make the filling up to three days in advance!
