I’m sure I’ve doubled my intake of leafy greens since introducing this balsamic reduction into my diet – it just makes everything taste so good! Toss it with rocket leaves and a splash of olive oil and you’ve got the perfect side salad, or bulk it up with feta, toasted almonds and roasted vegetables for an awesome vegetarian meal. Then of course you can drizzle it over pasta, pizza, stews, roasts, cured meats, cheeses and bruschetta as a finishing vinegar, or serve it with oil as a dipping sauce with crusty bread. Room for dessert? Try dotting it over berries and ice cream for an amazing sweet finish. If you were to make only one ‘flavour maker’ for your store cupboard, this would definitely be it (which is convenient, as it’s also one of the easiest).
