Ingredients
400g can coconut cream or coconut milk
180g water
80g brown sugar, coconut sugar, xylitol, maple syrup or honey
65g tapioca flour/starch
25g cocoa powder
Method
- Place all ingredients in TC bowl. Cook for 20 minutes, 100C, speed 4.
- While still piping hot, pour mixture evenly between 4 of our silicone pots. Put the lid on securely and refrigerate for a minimum of 3 hours. You need to pour your mixture while hot into individual serves as it will set once cold, and you'll need to cover them while in the fridge to prevent a skin forming. This is why are mini silicone pots with lids are perfect and fuss free! But if you don't have these, I'd recommend small ramekins covered with beeswax wrap or cling film.
Pop the lid off and serve in our cute silicone pots! Store in the fridge for up to a week.
