Thermomix Gajar Halwa Recipe (sweet carrot pudding)

Gajar Halwa is a carrot based sweet dessert pudding from India. A delicious, warming and healthy dessert or snack perfect after a curry or dahl.

Ingredients

1 tsp cardamom seeds
80g roasted unsalted cashews
1kg carrots, peeled and cut into quarters
50g coconut oil
80g coconut sugar
80g sultanas

Method

  1. Place cardamom seeds in TM bowl, mill for 15 seconds, speed 8.
  2. Add cashews, pulse twice on turbo speed to chop. Set aside.
  3. Without cleaning TM bowl, add carrots and grate for 8 seconds, speed 5, or until a grated texture.
  4. Add coconut oil and cook for 12 minutes, 100C, reverse speed 3.
  5. Add set aside cardamom and cashew mixture, sugar and sultanas, use spatula to combine.
  6. Cook for 14 minutes, 100C, reverse speed 3.

Serve warm with sweet cashew cream (pictured) or coconut yoghurt (recipe in Everyday Thermo Cooking). Garnish with rose petals (pictured).

Refrigerate for up to 3 days.
