A homemade recipe for your delicious classic Baileys liqueur, a drink enjoyed all year round over some ice, but our favourite at Christmas time in Australia when the weather is hot. And unlike the store-bought Baileys - this one is dairy-free and vegan! Super quick, easy, creamy, impressive and delicious this is going to be one of my go-to’s when socialising this silly season! Ingredients
140g Irish whiskey
2 tsp instant coffee
1 teaspoon vanilla extract
400g soy milk*
4 tablespoons maple syrup
Method

Place all ingredients in a blender or food processor and blend for 1 minute on high.
Serve immediately over ice or store in the refrigerator in a sealed jar and shake well before serving. Store in the fridge for up to 2 weeks. Enjoy!
*if avoiding soy, use almond milk
