The AA team are going crazy for Bulletproof coffee! It is a super quick breakfast on-the-go (essential for weekdays) that keeps us full and satisfied well into lunchtime. And when we aren’t thinking about our tummy rumbling, we can focus on work (it’s hard to write about food when you are hungry!). There is plenty of science on the topic (read here), but basically the fats provide satiety and extended energy without the crash usually associated with coffee. For anyone avoiding milk, this recipe mimics a latte without the large serving of lactose.
While the recipe may sound a little strange, a high-powered blender (like the Thermomix) makes sure it is creamy and delicious, not oily. Give it a try, see how you feel.
Serves one
+ gluten free
+ vegetarian
+ soy free
+ nut free
+ refined sugar free
Ingredients
350ml brewed coffee
1 tbsp grass-fed butter
1 tsp Brain Octane Oil, MCT oil or coconut oil
1 tsp xylitol (optional)
Method
-
Place all ingredients in TM bowl, mix for 1 minute, 80°C, speed 6.
Serve immediately, or sip throughout the day from an insulated flask or tumbler.
Note: I add the xylitol for sweetness without sugar, but the amount is purely based on personal taste.
Not so keen on coffee? I’ve also made this recipe with Matcha Green Tea and Vanilla Chai Tea which were both equally delicious. Want a savoury option? Substitute coffee with miso soup or homemade bone broth (not for the fainthearted, but I like it!).
