This recipe used to be sent out free to customers as a little gift when they placed an order on our online store… we had the cutest little cards printed! Now we send out something new (if you’ve ordered recently you’d know what!) but every few weeks we have someone emailing us saying “help! I’ve lost my card with the cookie recipe on it, and that was the BEST cookie recipe ever!”. So, to make your life just the little bit sweeter in isolation I’m now making this recipe available to EVERYONE! Enjoy, and seriously, try not to eat them all at once.

Ingredients
120g butter, melted
250g brown sugar
1 tsp vanilla extract
1 free-range egg
220g plain flour
½ tsp baking powder
200g dark chocolate chips
Method
- Preheat oven to 170°C.
- In a large mixing bowl, whisk together butter, sugar, vanilla and egg for 1 minute.
- Add flour, baking powder and choc chips, fold through using a spatula until all combined and no more loose flour remains.
- Line two baking trays with silicone baking mats. Roll mixture into golf ball sized balls and press down to flatten slightly. Place on a lined baking tray 5cm apart. Bake for 15 – 20 minutes, or until cookies just begin to brown on edges. Allow to cool on baking tray.
Try not to eat them all at once!
