San Choy Bau is a Chinese dish combining mincemeat, vegetables and flavoursome herbs and spices all nestled in crisp lettuce cups – now made plant based. We’ve kept all the delicious flavours and textures, but upped the veggies and significantly increased the fibre by using lentils as the base. Serve as a main meal on the lighter side, or as a starter to your Asian banquet. And how about this for an idea – make your Handy Asian Mince (p. 76) and use half for this recipe and the other half to make Pot Sticker Dumplings (p. 119).
