This salad is fresh and light, yet hearty and satisfying at the same time, making it the perfect all-rounder side dish. It’s got sweet, it’s got savoury, it’s got salty and everything in-between – full of punchy flavours! Use this recipe as a base and feel free to add and subtract based on what vegetables are hanging around your fridge. My favourite is to top with grilled eggplant, zucchini and capsicum and a dollop of Tzatziki (p. 166), or alongside my Eggplant Tagine (p. 106).
