Pot stickers are my favourite dumplings for making at home – we’re frying on one side and steaming the other all at the same time, meaning you don’t have to pick between fried or steamed dumplings, and it can all be done in the one pan. And my favourite type of pot sticker? One made with incredibly flavoursome Asian Mince (p. 76). One batch of mince filling goes a long way but if you don’t want to use it all, leave some aside for San Choy Bau (p. 68) or freeze and defrost for future dumplings.
