I’ve got my thermo cooker bolognaise sauce down to an art form. It can be easy to over-process the meat and end up with a watery sauce, but my mum Janene has developed the perfect recipe, so fear not! We are sure it will become a favourite, with love from our family to yours.

Ingredients
Brown onions, peeled and halved
Garlic cloves, peeled
Mushrooms (halved if large)
Olive oil
Can diced tomatoes
Tomato paste
Red wine
Stock concentrate (see page 249)
Balsamic reduction
Dried oregano
Sprigs rosemary, leaves only
Fine salt
Full-fat grass-fed beef mince, roughly crumbled
