Focaccia is a flat Italian bread similar in texture and taste to a thick pizza base - a beautiful soft, chewy inside, with a slightly crispy base and top. This is an impressive way to serve sourdough, and a great recipe to explore different bread flavours and textures. Perfect as a side dish to meals, as a starter served with dips, used on grazing plates and cheese boards, and for focaccia sandwiches. The added beauty of this recipe is that it’s perfect simply with salt flakes on top, but can also be topped with herbs, spices, olives, veggies, garlic - you name it! Fresh or dried, everything works from rosemary and onion to basil and tomato. Pick your toppings accordingly and your focaccia will pair perfectly with every meal. This is my favourite recipe when entertaining - the hands-on time and effort is extremely minimal, which is exactly what you need when you have guests over.
