I know what you’re thinking... this soup looks a little too healthy! I know, the team gave me that same look when I served it up. But, I am proud to say, everyone was pleasantly surprised and the bowls were scraped clean! And it’s now become a regular fixture. I think the secret lies in the leek – it adds so much more flavour than the standard onion, and by sautéing it for a full ten minutes we are really allowing those flavours to develop and shine.
