Given the choice, I’d much rather eat at home, surrounded by friends and family, than at a fancy restaurant. Despite having to do the dishes, I always find these nights to be the most fun and authentic. I love the way good food brings people together, and this is never more true than with celebrations at home. Armed with a slow cooker and a little planning, entertaining really can be easy! One of my favourite things to cook for a crowd is a Mexican feast – so many of the components can be made in advance and it caters for almost all eating preferences. Individually, the recipes are accessible and achievable, but put together they create a spectacular meal. Here I’ve done all the planning for you, so now all you have to do is invite the guests and get cooking!

This menu is for a feast for eight. Cook all the recipes or just a couple – this is simply a guide to help with planning and preparation. The whole menu is vegan, dairy free, soy free, gluten free and nut free, providing you leave out the sour cream and opt for a vegan cheese (but then watch the soy!). So, no matter who your guests are, everyone will be catered for without having to prepare any special dishes. Lay out everything in the middle of the table banquet style and let people serve themselves – not only does this make it easier on the host (you!), it also builds a sense of community around the table. Lay most components out in advance, skip the nibbles and get straight into the main event once everyone arrives – that way you can sit down and relax with your guests straight away. Mission accomplished.
