I had a few lacklustre responses to ‘carrot soup’ when I first created this recipe, but one taste successfully converted them all! It’s sweet thanks to the carrots, subtly spiced thanks to the harissa and creamy thanks to the coconut. Plus a good dose of flavour thrown in in the form of garlic, onion and my famous faux-chicken stock powder. And those plus a little olive oil are, literally, all the ingredients – it couldn’t be simpler.
