I cannot get enough of ginger! I make this cordial when I’ve got a bit of time and then love having it on hand for quick and refreshing sodas, spritzers and cocktails, as well as warm nurturing teas and tonics. It’s great if you’ve got a sore throat! It’ll keep for months in the fridge thanks to the sugar acting as a preservative, and you can always freeze it in ice cube trays and pull out a cube or two as needed – you’re going to want it on hand all year round. While you can buy ginger year-round, the best is available at the end of autumn and the start of winter, as that’s also when it’s cheapest, so that’s the ideal time to get a batch of this cordial on. It’s also really easy to grow it yourself in warmer climates, and once it’s planted it will keep giving you ginger year after year! You can even grow it in a pot.
