These nachos are seriously satisfying – they’re a definite crowd pleaser and pulled together with minimal fuss and ingredients. You’ll never pay for expensive Mexican take-out again. They’re about as fast as a slow-cooked recipe could ever be, taking just over an hour, so they’re a great one to have stashed up your sleeve for last-minute meals, especially if feeding a crowd (even the carnivores fronted up for seconds!). If you’ve made a batch of my best BBQ sauce (page 169) – go you! – you’re definitely going to want to serve it alongside these nachos ... sounds like a weird combination, but I promise, it really works.
