This is not your standard running-out-the-door weekday breakfast – this is pretty special and perfect for a lazy Sunday morning. There are a couple of steps involving a frypan, but all in all it won’t take you more than 15 minutes hands-on time to pull together ... in fact I think it’s got a great effort-to-impressiveness ratio. Put the slow cooker on as soon as you wake up and by the time you’re showered and dressed with a coffee in hand it’ll be ready for the next step. If you really want to hurry up the total time, fry your almonds and banana while the slow cooker is on, meaning at the 1-hour mark you can serve it all up straight away. Note here – don’t just make the chia pudding part and skip the toppings, this is not the recipe for that! The sweetness and flavour comes from the caramelised banana. If it’s a simple chia pudding you're after, head to page 43.
