I often debate whether to include ingredients in a recipe that need sautéing – do we really need to dirty that frypan?! I love cooking, but geez I hate washing up. In this case, however, I confidently stand by the leek – it adds so much flavour, and by sautéing it for a full 10 minutes we are really allowing those flavours to develop and shine. If all you can get is onions, use two of those instead, but the leek is where the magic is at. Also magical is the fact that, thanks to the coconut cream and nutritional yeast flakes, this soup is incredibly creamy and cheesy yet contains no dairy ... at all! I promise you won’t detect a hint of coconut!
