Rhubarb Cordial in the Thermomix

This cordial is a sophisticated take on the classic lemonade – sweet and sour all at once, but also with fragrant, bitter and spicy hints from the rhubarb, ginger and orange. The resulting natural pretty pink hue was a surprise even to me! Rhubarb may not be the most versatile of plants, but it is one of the only vegetables that you plant once and it will keep delivering goodness year after year, making it one of my favourites.

Ingredients

Lemon, rind and juice
Oranges, rind and juice
Ginger, washed
Raw sugar
Trimmed rhubarb, cut into 3cm pieces
