My sister Loryn thought this was one of my stranger salad combinations, but then immediately fell in love when she tasted it. It is simple and fresh but unexpectedly satisfying as a quick meal – the warm potatoes soak up all the flavours of the dressing while the seeds and cos add crunch and the dried fruit gives a hint of sweetness. The fried egg on top seals the deal, and if you keep the yolk runny it acts as a second dressing. It’s delicious warm or cold, making it the perfect lunchbox meal.

Ingredients
Spring onions, ends trimmed, halved
White balsamic vinegar
Olive oil
Dijon mustard
Fine salt
Boiling water
Baby red potatoes, quartered
Macadamia oil, for frying
Eggs
Baby cos lettuce, roughly chopped
Salad seed sprinkles or Mixed seeds
Sultanas or Dried cranberries
