It was my lovely staff member and friend Pauline who first introduced us to the
wonders of real homemade piccalilli, and the whole office fell in love! It’s a delicious chunky chutney with the perfect mix of sweet and tangy, combined with delicious spices. It’s incredibly versatile so use whatever veggies are seasonal and plentiful, although cauliflower is my personal favourite.

Ingredients

Mixed veggies, finely chopped
– Cauliflower, Cucumber, Carrots,
Capsicum, Zucchini, Shallots, Green beans
Fine salt
Cumin seeds
Coriander seeds
Raw sugar
Cornflour
Dijon mustard
Ground turmeric
Apple cider vinegar
