This mayo is tangy, sweet and full of flavour. Serve it with homemade sweet potato fries (pictured) and polenta chips, slather it on burgers and sandwiches, and toss it through coleslaws and potato salads. I’ve included my pick of herbs, but you can use whatever you have on hand.
