Gelatine is all the rage for gut health, and here’s how I include it in my diet – fruit jellies! These are a really satisfying sweet treat and surprisingly are filled with protein and collagen. I’ve written this as a guide rather than a recipe because whatever your family’s favourite fruit flavours are, do that! Or whatever you’ve got on hand – this is a great way to use up little bits and pieces in the fridge. Look for grass-fed beef gelatine from the health food store, not from the baking aisle of the supermarket.

Ingredients
Powdered gelatine
Fruit juice (not kiwi or pineapple)
Fresh or frozen fruit
– Raspberries, Blueberries, Peaches, Apricots,
Watermelon, Mango, Banana or Pear
Extra liquid
– Fruit juice, Coconut water,
Coconut milk, thin yoghurt or thin cream
Sweetener
– Raw sugar, White sugar,
Coconut sugar, Xylitol, Honey, Maple syrup,
Agave syrup or Coconut nectar
