This would have to be one of my favourite curries, and the fact that it is vegan is just an added bonus. Not to mention that it also happens to be super easy to make. You’ve got a creamy coconut base, silky tofu, crunchy toppings, a kick from the curry paste and a fresh burst from the apple, cucumber and lime, all mopped up with fluffy white rice.

Garlic cloves, peeled
Coconut oil
Thai green curry paste
Can coconut milk
Fine salt
Block silken tofu
Jasmine rice
Water
Cucumber, shaved
Green apple, cored and shaved

Fried shallots
Fresh coriander
Fresh mint
