Pancakes were the very first thing I ever learnt to cook as a child and were a weekend favourite. Although back then my recipe was a little more basic – a mug of flour, a mug of milk, an egg. While I adore the simplicity of my original formula, these pancakes are much, much fluffier and definitely more delicious! In fact, they’re so good that most of the time we don’t even bother with the toppings.
