These patties taste just like your classic fast-food burger, but unbelievably they’re made from eggplant! I was a sceptic too when Ellen first created the recipe, but now I am absolutely hooked, preferring these to the standard mincemeat option. This is such an easy way to cook with eggplant – no roasting required.
