With all that rich and heavy festive feasting, we thought a fresh, bright and light Christmas salad was just the thing! The Thermomix (or other brand of thermo cooker) makes steaming the veggies just so easy. While we created this recipe for Christmas time, frankly it would be a waste to only make it once a year! Whip up whenever you’re looking for a light meal or a beautifully flavorsome side dish.

Ingredients
1 red onion, thinly sliced
100g white vinegar
15 baby beetroots, washed, ends trimmed and halved
1kg broccoli, cut into florets
100g olive oil
100g sherry vinegar
1 lemon, juice only
2 tsp Dijon mustard
Salt, to taste
100g rocket
Bunch mint, leaves picked
Micro mint, to serve (optional)
200g feta, to serve*
1 pomegranate, to serve
100g slithered almonds, toasted, to serve
Method
- Combine onion and white vinegar in a small bowl. Set aside.
- Meanwhile, fill TM bowl with 800g water and insert steamer basket filled with beetroots. Steam for 22 minutes, Varoma temperature, speed 3.
- Place broccoli in lower Varoma steaming tray, steam (along with beetroot) for 8 minutes, Varoma temperature, speed 3, or until cooked to your liking. Rinse broccoli under cold water. Set both broccoli and beetroot aside to cool.
- Place oil, sherry vinegar, lemon juice, mustard and salt in dry TM bowl, mix for 10 seconds, speed 4. Toss dressing together with beetroot, broccoli, rocket, mint and drained onion.
Top with micro mint, feta, pomegranate arils and almonds and serve.
*Use a vegan feta for a vegan and dairy free option, or simply omit altogether.
