Brand new free thermomix recipe - a delicious chocolate-y pudding free of dairy, eggs, refined sugar, artificial flavours and preservatives! All nourishing whole ingredients. Just like a warm custard when hot and a chilled dairy dessert when cold (Yogo anyone?!), this is a brilliant recipe to whip up for a little sweet treat and a good night’s sleep. The secret to making it silky-smooth and custard-like? Kuzu! So many of you have been purchasing kuzu to make our coconut yoghurt and super-thick yoghurt, but did you know kuzu is a super-nutritious ingredient in it’s own right, not just a thicker? “None comes close to kuzu and its ability to quell digestive disturbances and calm the nerves” (mindbodygreen). It also contains isoflavones, known to lower cholesterol, blood pressure, blood sugar and insulin levels, and is anti-inflammatory. What’s not to love?! Ingredients
400g can coconut milk
100g water
5 tablespoons powdered kuzu*
3 tablespoons cocoa powder
3 tablespoons maple syrup or raw honey
1.5 teaspoons vanilla extract
Pinch of quality salt
Method
- Place all ingredients in TC bowl, mix for 10 seconds, speed 4. Scrape down sides.
- Cook for 10 minutes, 90C, speed 3.
Serve immediately for a warm custard, or set in ramekins to enjoy chilled later (we love pouring the mixture into our silicone dariole moulds as they’re the perfect size, or our yoghurt jars as they come with lids!). Happily refrigerated for up to 5 days.
*if using kuzu rocks, simply mill for 10 seconds, speed 10 first.
