In order to increase our iron consumption, we have created our ‘Balls of Steel’ – an afternoon snack packed with iron and vitamin C to assist in absorption. We’ve harnessed the health benefits of blackstrap molasses, one of the best dietary sources of iron, and used it to bind together a host of delicious and nutritious ingredients.

Ingredients
100g raw cashew nuts
75g dried apricots
75g dark chocolate chips (70% cocoa)
30g sesame seeds
50g blackstrap molasses
1 tsp vitamin C powder (gubinge or kakadu plum)
Method
- Place apricots, cashew nuts and chocolate chips in TM bowl, chop for 3 seconds, speed 8.
- Add molasses, sesame seeds, vitamin C powder, mix for 20 seconds, speed 4. Using wet hands, form into balls. Refrigerate until ready to serve.
Serve as an afternoon pick-me-up. Steer clear of dairy, alcohol and caffeine when eating these, which can interfere with iron absorption.
Variation: Roll finished balls in cocoa or desiccated coconut.
For a vegan and dairy-free option, use dairy free dark chocolate or replace chocolate with 6 pitted dates. Roll finished balls in unsweetened cacao or cocoa powder.
