There is no better way to serve a rich ragù than on a bed of pillowy polenta. This is one of my favourite things to cook when entertaining in the cooler months as it is the ultimate comfort food. Of course that’s not the only use for this creamy accompaniment; it also goes beautifully with sautéed mushrooms, wilted greens, hearty stews, roasted vegetables and grilled meats. Season with truffle salt to finish the dish to perfection.
