This may look like one of the longest recipes in this entire book ... and for a dip! But I promise the hands-on part actually won’t take that long at all, and this really will be the best hummus you’ve ever eaten. It’ll make an impressive starter at your next pot-luck dinner or picnic, or accompaniment to a Middle Eastern feast or barbecue. The fig, nut and honey topping really is the icing on the cake here, but the hummus is still amazing without, so I’ve made it optional ... and perhaps it’s not necessary if you’re spreading the hummus inside sandwiches or wraps. But, if you’ve got the ingredients, give it a go – it’s pretty special.
